Salad Dressing

Reduced Sugar Tomato Paprika Dressing

3/4 pound ripe tomatoes or one can diced tomatoes, drained
3 tablespoons white wine vinegar
1 teaspoon light brown sugar
1 teaspoon fresh garlic, chopped
1/2 teaspoon mild paprika
1/2 teaspoon crushed basil
3 Tablespoons sesame oil
Salt and pepper to taste
 

Boil water in a saucepan. If using ripe tomatoes, cut an “X” in the bottom and drop in pan. Boil 30 seconds. Remove from water, cool and peel, discarding the skin. Cut tomatoes remove the seeds and place cut tomatoes in the blender.

Add the vinegar, sugar, garlic, paprika and basil and blend until smooth. Add sesame oil through blender cap if appropriate, or stir oil into mixture and re-blend. Season with salt and pepper to taste.
