Do-It-Yourself, All-Purpose Baking Mix
Use in place of pre-made mixes for pancakes, muffins and biscuits.
In a large bowl, mix:
4 cups each all-purpose flour and whole wheat flour (or other whole grain flour)
2 Tablespoons baking powder
1 Tablespoon salt
2 teaspoons cream of tartar
1 teaspoon baking soda
2 cups dry nonfat milk
Using a mixer, pastry blender, or fork, cut in until mealy: 2 cups shortening or butter in one-half cup increments
Put in air-tight container and store either in refrigerator or at room temperature. Use within 3 months.
Serving size 1/4 cup -- 48 servings per recipe.

To make biscuits, use 3 cups of mix, 2/3 cup of milk or water and mix until a soft dough forms. For drop biscuits, increase the liquid to 1 cup. You can vary the flavor by adding grated cheese, herbs or spices. Bake at 450 degrees for 10 minutes.
To make pancakes, use 2 cups of baking mix with 1 3/4 cups of milk or water. Add 1/2 teaspoon of cinnamon, 2 to 4 tablespoons of sugar, and 1 egg.
To make coffee cake, use 2 cups baking mix, 1/2 cup of sugar, 2/3 cup of milk or water, 2 eggs for the bottom layer. For the topping layer, 1/3 cup of baking mix, 1 teaspoon of cinnamon, 1/3 cup of brown sugar and 3 Tablespoons of butter. Add nuts or raisins to taste. Mix cake layer and spread into a greased 8 x 8 pan. Mix topping ingredients, cutting in butter until crumbly. Sprinkle the topping mixture over the cake mixture. Bake at 375 degrees for 18 to 22 minutes until golden brown.
To make pizza crust, use 2 1/2 cups of mix, 3/4 of warm, not hot, water and 1 package of dry yeast. Dissolve yeast in water. Add mix, stir. Knead slightly. Makes 2 large crusts. Bake at 425 degrees until golden brown.
