Grilled Lime Chicken Serves 4

4 chicken breasts
2 teaspoons mustard
1/4 teaspoon cayenne pepper (optional to taste)
1 tablespoon Worcestershire sauce
1/4 cup brown sugar or honey (depending on taste)
1/3 cup lime juice
1 teaspoon lime peel - grated
1/2 teaspoon pepper
1 clove minced garlic
1/2 cup olive oil

Mix marinade ingredients together.

Set aside some of the marinade for basting during grilling. Pour the rest of the marinade over chicken breasts in a zip-sealed plastic bag and place in the refrigerator overnight. (You can use frozen chicken breasts and allow them to thaw in the marinade.)

Drain marinade from the chicken and discard. (You can also boil the drained marinade for use as additional basting liquid.) Grill the chicken on an outdoor grill 8 inches from the heat or broil it in the oven, basting with the set-aside marinade.

Turn every 5 to 8 minutes for approximately 30 to 45 minutes until fork tender and juices run clear. Garnish with cilantro and lime slices. For a slightly different flavor, add ½ cup low-sodium soy sauce.
